We eat the meats we do not because they are the tastiest, but because they are the easiest to industrialize. There is an inverse relationship between industrializing animals for meat processing and how delicious your steak, lamb chop, or ham is. Like humans, animals are what they eat—so the ones who graze freely in nature beget better flavors. We are experts at recreating wild and heritage flavors using plant-based sources. We now want to become experts at completing the sensory experience and providing the best appearance possible, and that's where Ewe (yes, you) come in. We are looking for a food scientist to create the best colors for plant-based meats.
You will work closely with a small team of food scientists at our R&D kitchen in San Francisco to develop and modify the appearance of our plant-based meat products. Successful individuals will be self-motivated, organized, and adaptable. We are looking for a candidate to create new solutions that will mimic the appearance of meat.

Key Responsibilities:
● Develop new technologies from the ground up to improve the appearance of both the uncooked and cooked plant-based meat products.
● Innovate new ways to control oxidation and mitigate color changes during storage.
● Investigate how different factors in a meat analog system (e.g., pH, heat transfer, emulsion components, antioxidants, etc.) affect the final color of plant-based meat products.
● Decipher bench-top processes to scale up processes for color-related technologies.
● Provide verbal and written reports of research progress and contribute to preparing patents and/or protocols.

Qualifications:
● PhD or MS with 5+ years experience. Degree in food science, material science, physics or biophysics, chemistry, physical chemistry, biological or chemical engineering, or a related field.
● Prior experience working on food product development; experience working in plant-based product development, natural colorant, dye, ink, and similar industries is a plus.
● Expertise in one or more of the following: plant-based colorant functional properties, encapsulation techniques, thermal and oxidative stabilities, degradation and/or color-changing technology.
● Working knowledge of color chemistry and processing for use in the food industry.
● Passion for innovation and desire to push scientific boundaries to produce novel color technology for plant-based products.
