Food Scientist

Cultured Decadence is creating novel methods to make crustacean products using cell culture and tissue engineering techniques. In support of this work, we are seeking a food scientist who is highly motivated, embraces novel ideas, and will employ innovative thinking to advance the research and development of cell-cultured lobster meat.
You will be a pioneer in an emerging industry and contribute to creating solutions to address the growing demand for sustainable seafood products, reduce the environmental impact of current production methods, and increase access to seafood for consumers around the world.
A competitive candidate will take initiative, thrive in dynamic environments, and have a background in food engineering and/or food science with experience in meat or seafood product development from bench-top through commercialization.
KEY RESPONSIBILITIES
- Apply food engineering and technology concepts to develop cell-cultured seafood products
- Design, conduct, and analyze food engineering, biochemistry, and food science experiments in conjunction with cell-culture R&D team
- Collaborate with the cell-culture R&D team to translate scientific problems into testable hypotheses and draw appropriate information from experimental results
- Develop lab/pilot scale unit operations, processes and apply existing/new formulations and processing techniques for consistent food product quality in compliance with regulatory requirements
- Work with suppliers to identify most appropriate key functional ingredients for cell-cultured seafood products
REQUIRED SKILLS AND BACKGROUND
- Masters or Ph.D. in food engineering, food science, protein chemistry or related subject with minimum of 3 years of product development from bench-top through commercialization
- Expertise in meat or seafood muscle, rheology, flavor chemistry, protein chemistry, functional lipids, and carbohydrates
- Broad working knowledge of food product development including product formulation, stability testing, and quality control testing
- Proven experience in developing lab scale assays, executing complex experimental plans, and data interpretation
PREFERRED ADDITIONAL SKILLS
- Experience with packaging development, nutrition labeling requirements, FDA regulatory processes, and microbiology/food safety
- Working knowledge of sensory testing, nutritional testing, and commercial scale-up
- Experience with food-safe biomaterials
